Chef Annah's Mediterranean Fish in Parchment
The following dish pairs in priority order with wines in Calldera categories b, f, j, c, g and k. White wines preferred.

Prep Time: 10 minutes
Cook Time: 25 - 30 minutes
1 or 2 thick slices of mild white fish, such as halibut or mahi mahi (1/4 - 1/2 pound per person)
1 tablespoon fesh oregano leaves (1 teaspoon of dried herb may be substituted)
1 tablespoon fesh basil leaves (1 teaspoon of dried herb may be substituted)
1 cup fresh grape tomatoes
1/2 small lemon
1/3 cup crumbled feta cheese
salt and pepper to taste
olive oil
parchment paper
Pre-heat oven to 375⁰ F.
Chop fresh herbs.
Slice grape tomatoes in half.
Place fish on parchment paper atop a cookie baking sheet.
Squeeze lemon over fish.
Salt and pepper fish to taste.
Top fish with grape tomatoes.
Sprinkle herbs over tomatoes.
Add feta cheese to dish.
Drizzle olive oil over dish.
Completely wrap dish in parchment paper.
Bake on cookie sheet for 25 - 30 minutes, depending upon thickness of fish.
Serve.
