The Sokol Blosser Evolution is a dry, fruit-forward, light-bodied white wine exhibiting fresh acidity.  The predominant fruit flavor is green apple.  The wine is ready to drink now and should be cellared for no more than two years.

Made from a blend of white grapes, Evolution is a well-balanced wine with exception of its discernible acidity.  However, the wine’s acidity is not in any way overpowering.  Rather, it lends a refreshing quality to the wine.  The wine’s fresh acidity also makes it a great choice for certain food pairings.

Evolution’s vintner has done a nice job selecting grapes and blending the juice in proportions that result in a pleasing green apple flavor that perks up the senses without assaulting the taste buds.  It’s nice to sip on its own if you are someone who appreciates a little tartness (i.e., your Calldera taste profile includes acidic wines).
